Growing Notes:
Winemaking and winemaking activities intend to foster and sustain complexity. Further preserving fruit freshness, and give the wine a distinctive creamy texture. To achieve these goals, several main protocols required. Various dietary traditions are used in the vineyard to produce flavorful fruit. Once in the vineyard, the use of species of cultured yeasts is used, each producing subtle variations in the resulting wines’ flavors and texture.
Winemaking Notes:
An advanced oxo barrel racking system allows for rolling the barrel in place. To lock the lees into place throughout the barrel without having to remove the bung. This reduces oxygen absorption in the wine and preserves delicate aromatics. While also moderating oak extraction. This process gives the wine a creamy texture and allows for a seamless transition of wine and oak over time.
