Barrel Selection:
11 months in 100% French oak; 95% neutral, 5% new
Growing Notes:
Whereas a winery that really wants to embrace a Burgundian expression of Pinot Noir, The Fableist embraces vineyard sites with sandy soils.
Winemaking Notes:
Sustainable winemaking, no additives, vegan. Native yeast fermentation and minimal sulfur.
The winemaker notes to play with a small amount of whole cluster in their ferments to bring out savory components. Meanwhile this wine receives one punch down or pump over daily to intentionally keep the integrity of the fruit and for a softer extraction. It’s then fermented with native yeast and aged 100% in barrel.

The Fableist in addition collaborates between winemakers Curt Schalchlin and Andrew Jones. Curt, owner and vintner of the heralded winery, Sans Liege. Known for evidently critically acclaiming Rhone varietal wines. Andrew, winemaker of Field Recordings spends his days planning and planting vineyards and has stood foot in just about every vineyard on the Central Coast. Together, they produce The Fableist, a collaboration that gives special attention to the craft and story behind each wine.

Each bottle furthermore has artfully designed and inspired by one of Aesop’s many fables.
