10% New American Oak, 90% Neutral
Growing Notes:
Cabernet Sauvignon grapes sourced from Paso Robles. Devi, Hinterland (organic), Old Koligian, Old Potrero (organic), San Benito, Wine Porch, Zepherino Vineyards. The winemaker began by hand-selecting 7 exceptional Cabernet vineyard sites. Once the fruit reached its optimum level of ripeness and balance, they made the pick call and brought it into the winery.
Winemaking Notes:
Sustainable winemaking, no additives, vegan. Native yeast fermentation and minimal sulfur.
The winemaker further plays with a small amount of whole cluster in their ferments to bring out savory components.
Blend of 95% Cabernet Sauvignon 3% Merlot 2% Malbec. Upon arrival, the fruit was de-stemmed 100%. The grapes ferment in stainless steel tanks with native yeast, and further give one pump-over daily during fermentation. The grapes were pressed and sent to barrels after 3 weeks on the skins, allowing malolactic fermentation to occur naturally. The barrels chosen to age this Cabernet were 20% new American oak and 80% neutral oak.
About The Winery:
The Fableist further collaborates between winemakers Curt Schalchlin and Andrew Jones. Curt, owner and vintner of the heralded winery, Sans Liege, furthermore is known for his critically acclaimed Rhone varietal wines. Whereas Andrew, winemaker of Field Recordings spends his days planning and planting vineyards and has stood foot in just about every vineyard on the Central Coast. Together, they produce The Fableist, a collaboration that gives special attention to the craft and story behind each wine.
Each bottle artfully designed and inspired by one of Aesop’s many fables.
Compared to each of his timeless vignettes has a moral, they believe that every blend has its own story to tell, its own lessons to teach.
